I have a serious sweet tooth. I love dessert, and sometimes would prefer that over dinner. Baking is not my specialty though. I have failed desserts more often than anything else, so I don't make home made desserts often. I think my problem is that I always want to make little substitutions, and while occasionally it works, it doesn't always. I can't seem to put in the right amount of butter or sugar, I just always want to make it healthier!
This is why I love fruit, and fruit desserts. Fruit is naturally sweet, lends itself to dessert well, and keeps the added sugars down. This recipe is one that is very simple, turns out every time, and has lots of substitutions you can make to make it new and different! Enjoy!
-5 cups fruit (cherries, strawberries, raspberries, peaches, plums, etc)
-1.5 Tbsp Cornstarch
-1/3 cup splenda, stevia or other sweetner (optional)
-1 can diet soda (most often sprite or 7 up)
-1 box cake mix (usually a vanilla or yellow, but chocolate and spice work well too)
Start by measuring 5 cups of fresh fruit. For this time I used cherries, YUM!
Spray a 9x13 pan with non stick spray. Spread fruit over the pan.
In another medium sized bowl mix 1 cake mix (spice or chocolate are excellent over cherries, try yellow over peaches, or vanilla over strawberries or raspberries yum) with 1 can of diet soda (preferably sprite or 7 up)
Mix until smooth, but don't over mix.
Top with light ice cream or light whip cream. Enjoy!
