Don't Eat Out, Stay In - Chicken Fajitas!

New for Thursdays!!  A recipe swap to make at home rather than eating out!  In future posts I will have a price comparison, in addition to the calorie difference.  I thought if you have the recipe and instructions on Thursday, it is enough time to get any last ingredients before the weekend.  So, enjoy Staying-In instead of Eating Out!

Craving Mexican this weekend?  How about chicken fajitas?  These are flavor packed, take less than 30 minutes, and are sure to please.  Serve with black beans or fat free re-fried beans, and a quick Mexican rice (a boxed one will come together fast!)  Going out for Fajitas will cost you some serious calories.  Applebee's Sizzling Skillet Chicken Fajitas has 1370 calories, 52 grams of fat (24 grams saturated fat!!), and 4920mg of sodium, ouch!  Other restaurants have similar numbers.  Making it at home, using 50 calorie tortillas (love La Tortilla Factory) comes in around 225 calories, 10 grams of fat (only 2 gram saturated), and 560mg sodium, add some sides, and you can easily stay under 500! (1/2 cup of rice is about 110 calories, 1/2 cup of beans is around 120, add extra veggies and salsa for next to nothing!)   Much much better!

Chicken Fajitas
(Serves 4)
4 chicken thighs (boneless, skinless)
1 large onion
2 bell peppers (red, green, any color!)
1/4 c. low sodium chicken stock
1 Tbsp minced garlic
1 tsp cumin
1 tsp chili powder
1 Tbsp lime juice
1/2 tsp Salt (plus a little extra)
1/4 tsp pepper (plus a little extra)
1/2 tsp crushed red pepper
1 tsp canola oil

Slice 1 onion into thin rings

 Slice bell peppers into thin strips

Make the seasoning mix, using 1/4 cup Chicken stock, garlic, lime juice, cumin, chili powder, salt, pepper, and crusted red pepper.  Mix together is bowl.

 Slice chicken thighs into thin strips.  Sprinkle lightly with salt and pepper.
Over medium high heat, heat 1 tsp canola oil.
Add chicken, plus 2 Tbsp spice mix.
Cook about 5-6 minutes, or until chicken is cooked through.

Remove chicken from pan and keep warm.

Add remaining seasoning mixture, let heat for 1-2 minutes.

Add onions and peppers

Stir occassionally, continually coating with sauce.  Cook for about 12 minutes, or until vegetables are tender.

 While vegetables are cooking, dice tomato and slice lettuce to top fajitas.  You can also shred cheese and heat up beans to serve with fajitas.

Add chicken back to pan once vegetables are tender to heat back up, and toss all together.
Top 2 smaller tortillas or 1 large tortilla with chicken and vegetables.  

Top with lettuce, tomatoes, salsa, and any other toppings you like!
